Hi, I’m Rhi – the passionate baker and cake artist behind The Mess, based in the heart of St Kilda, Melbourne. Baking has been my love since I was 14, and it all started with my Nunna Carmena, whose skills and passion for creating edible masterpieces I’m lucky enough to carry on.
At The Mess, we’re all about making gluten-free cakes that don’t skimp on flavour or fun! As a fellow coeliac, I noticed there was a need for cakes that taste just as good as they look, so I decided to fill that gap. We craft cakes that are as delicious as they are gorgeous, perfect for any occasion or just to treat yourself to something sweet and special.

Cake Cutting Guide
Simple Steps for the Perfect Slice
Cutting your cake is easy! For smaller cakes, a traditional wedge slice works best. For larger or taller cakes, use a chopping board to cut the cake into even slices, ensuring everyone gets a perfect portion.
Step 1: Before you slice, take care to remove all toppers and flowers. Position a cutting board against the side of your cake and cut a 1" slice.
Step 2: Lay the cake slice on your board and cut into dessert (1"x2") or coffee (1"x1") portions.
Step 3: Repeat for the rest of the cake to ensure even portions. Enjoy your cake!
Step 4: Extra tall cake can be cut again through the middle for even smaller portions.

The earlier, the better! Cakes are reserved on a first-come, first-served basis.
Depending on the shape, size and design we kindly request a minimum of 2-8 weeks notice, so best to book as early as possible.

Please touch base with us via our enquiry form on our website. Initial response will be within 1-2 business days.
Once your quote has been finalised, we will provide you with an invoice for payment of a non 50% deposit to secure your booking. The remaining balance is payable within 2 week of your collection/delivery date.

Unfortunately, we are unable to sell non-gluten-free cakes. As a Coeliac, Rhi takes pride in quality control of all of her cakes to make sure they are delicious for all customers. And trust us.... you can't tell the difference.

Rhi refrains from directly replicating cakes designed by others, both to respect copyright laws and to ensure our customers' satisfaction. We appreciate the use of inspiration and mood boards, so Rhi can draw inspiration from images and interpret them in her distinctive style, showcasing her own signature and personal touch.

Yes, we do offer cake collection, however, please remember your cake is a delicate piece of art! Once the cake leaves our care, it becomes your responsibility, and we cannot be held liable for any damages that may occur during transportation.
Located in St Kilda, Melbourne, our address will be shared upon order confirmation. Each cake is carefully boxed for secure transit.

All cakes will be packed and stored securely in a cake box. For safe transportation of your cake, the best place is on the floor of your car. This is typically in the passenger side footwell or your car boot. It is advised to drive slowly with extra care.
It's strongly advised to keep the car air conditioner on. Avoid placing cake boxes on car seats and refrain from pressing on the sides of the cake box; support from underneath is recommended. -
Yes! Delivery is available for an additional fee starting from $49.95, and is subject to availability. It's highly recommended, especially for 2-Tier cakes and larger, to ensure the delicate designs remain intact during transportation.
Cakes are typically delivered 1-3 hours before the event for display. Refrigeration is crucial, particularly in warmer months, for earlier deliveries.

Our cakes require refrigeration until ready for display, which means you will need to find room in your fridge for storage. You will be provide with box dimensions prior to pick up/delivery.
If refrigeration is not possible, ensure it is kept away from direct sunlight or heat sources.
Before cutting, remove your cake from the fridge 1 - 2 hours and allow it to come down to room temperature before enjoying!. Adjust timing as needed based on the weather and temperature conditions.
Leftovers can be stored in an airtight container for up to three days, but it is always best when eaten fresh.

Deposits: 50% deposits are non-refundable within six weeks prior to the delivery/pick-up time for your order, and non-transferable to new orders or another persons in any circumstance
Cancellations: No refunds or credits will be issued for cancellations made within 2 weeks of the event.
Changes to Orders: Any changes to delivery/pick-up times are at our discretion and may incur additional fees.
Consumed Orders: We cannot issue refunds for orders that have been consumed (in full or part).
Date Changes: We do understand that things happen; if you need to move your order date, you will need to notify us in writing, and the new date is subject to availability.
